Ethan's Favorite Snowman Cupcakes


How I love thy snowman cupcake




These are Ethan's FAVORITE.

I make my Vanilla cupckake batter as follows:
Makes about 30 cupcakes
1 3/4 cups cake flour, not self-rising
1 1/4 cups unbleached all-purpose flour
2 cups sugar
1 tablespoon baking powder
3/4 teaspoon salt
1 cup (2 sticks) unsalted butter, cut into 1-inch cubes
4 large eggs
1 cup whole milk
1 teaspoon pure vanilla extract

1. Preheat oven to 325°. Line cupcake pans with paper liners; set aside. In the bowl of an electric mixer fitted with the paddle attachment, combine flours, sugar, baking powder, and salt; mix on low speed until combined. Add butter, mixing until just coated with flour.

2. In a large glass measuring cup, whisk together eggs, milk, and vanilla. With mixer on medium speed, add wet ingredients in 3 parts, scraping down sides of bowl before each addition; beat until ingredients are incorporated but do not overbeat.

3. Divide batter evenly among liners, filling about two-thirds full. Bake, rotating pan halfway through, until a cake tester inserted in the center comes out clean, 17 to 20 minutes.

4. Transfer to a wire rack to cool completely. Repeat process with remaining batter. Once cupcakes have cooled, use a small offset spatula to frost tops of each cupcake. Decorate with sprinkles, if desired. Serve at room temperature



Take 2 marshmallows. Cut one in half use that for the head stick them together with frosting mini PB cup sliced in half for a hat. poke 3 holes for eyes and nose and use sprinkles to fill 2 eyes and nose.

Yummiest Meatballs

I have been on a search for the most delish meatball. I found it. It is the Rao's Meatball recipe that I had tweaked to my liking. You can can tweak yours to your liking like all Beef, or all turkey, you can do Half and half or really whatever you enjoy, this is what I found to be the perfect blend for the best meatball. Barefoot Contessa Baked Virginia Ham

Serves 35 for dinner, 50 for cocktails. 1 spiral-cut smoked ham, fully cooked -- 14 to 16 pounds 6 cloves garlic 8 1/2 ounces mango chutney -- Major Gray's 1/2 cup Dijon mustard 1 cup light brown sugar -- packed zest of 1 orange 1/4 cup fresh orange juice Preheat oven to 350 °F. Place the ham in a heavy roasting pan. Mince the garlic in a food processor fitted with the steel blade. Add the chutney, mustard, brown sugar, orange zest, and orange juice and process until smooth. Pour the glaze over the ham and bake for 1 hour, until the ham is fully heated and the glaze is well browned. Serve hot or cold.
